Favourite Thai versions of Hainanese Chicken Rice include Khao Man Gai (Hainan is a province of Southern China). Khao Man Gai means rice cooked with chicken fat because Khao is translated as rice and Mun as fat. Sliced after being perfectly poached, the chicken is placed on a bed of jasmine rice cooked in the poaching liquid.
